About this jar

Will the runny jar set?

Slowly. Lime honey usually stays runny until spring, then turns soft and pale. A bowl of warm water brings it back in twenty minutes.

What is the creamed option?

The same honey, stirred by hand twice a day for a week as it cools, so it sets in fine crystals. Nothing is added; it spreads without tearing bread.

Can I eat the comb?

Yes — it is pure beeswax from new frames, never treated. Chew it like gum and swallow or discard the wax; both are fine.

How long does an open jar keep?

Two years from the date on the lid, closed, in a cupboard. Keep the spoon dry and the lid on; honey that takes on water can ferment.
